2. Istanbul, Turkey

Turkey — an intoxicating blend of old and new, East and West. Its status as one of the world’s great trading hubs means Istanbul’s cuisine borrows heavily from its neighbours (Syria, Greece, Armenia or Iraq, for instance, as well as the Ottoman and Persian empires of long ago).
